The "Revolutionary Ball Physics" that was marketed heavily in 2006 holds up surprisingly well. The ball feels independent of the players; it bobbles, it skips off the turf, and it doesn't perfectly stick to a striker's feet. You have to actually think about the weight of a pass. Through balls are lethal, and goalkeepers—while occasionally prone to howlers—feel less like pre-programmed walls and more like actual athletes scrambling to make a save.
Upvote if you still hum the "EA Sports... it's in the game" jingle in the shower.
However, the rosters are static. This is not a "Live Service" game. You are playing with history. If you want to see Arsenal's "Invincibles" core still largely intact, or Kaka tearing apart defences at AC Milan, this is your playground. The Remaster includes a "Legacy Mode" where you can start a career with these specific squads, but don't expect the depth of scouting or Youth Academy features found in modern titles.
