In H.264 compression, the encoder looks for redundancy between frames (I-frames, P-frames, B-frames). It tries to say, "This pixel looks like the pixel in the previous frame, so I won't redraw it." For an x264 encoder, these elements are the final boss. The desert scenes are filled with "film grain" (or digital texture) that provides that gritty, tangible feel. In the world of compression, grain is noise, and noise requires bits.
